Jonathan grew up immersed in family, extended family, love, and God. Blessed with parents who cook, and surrounded by people who eat, Jonathan began his informal culinary training much earlier than most. His Greek father and Puerto Rican mother provided diversity and dedication which would set the stage for his love of flavor, culture, and hospitality.Always adventurous and hard working, Jonathan found himself behind the stove, at first to help, but quickly for his own compulsions. Curious and awoken, he began a self-study of food, wine, and the arts. As the years passed his palette and the passions grew. He absorbed, experimented, and fed.In 2003 Jonathan applied in person at the renowned restaurant Mirabelle. Turned away at first, due to his “lack of resume”, Jonathan was undeterred, he persisted until granted an opportunity. This two year stint under the ever open and generous hands of Chef Guy Reuge provided the finishing touches on what would become a lasting career.Love and support from patrons, family, friends, and partners (Parents and Tate Morris most notably above all) have given Jonathan the desires of his heart. A place to play and live the dream that all individuals in whom excel deserve.
